I have made this several times now and my little family just loves it! If you have ever given up on cauliflower, you should definitely try this recipe. It never fails to please in our house, and even our family members who aren’t quite as adventurous with healthy food like it (not to mention, the little fellow loves it) :).
Yesterday, I made a double batch of it because it just doesn’t last as long as I hope. In the winter time, it is tough for me to want to eat salads. So this is a good way to feel like I am splurging with potatoes, but squeezing in a cruciferous vegetable! Cauliflower has so many health benefits (good for digestive, brain, anti-oxidant, anti-inflammatory, etc!). Like most people, and hibernating bears, I just want heavy foods!
I served this yesterday with my favorite slow cooker barbecue chicken. I’ll post that recipe on another date if I remember. I love making it because it feeds an army and you can make home made barbecue chicken pizza with leftovers (or put it on salad if you have a salad!).
Cauliflower Faux-Potato Salad
1 head cauliflower
2 stalks celery, diced
1 small onion, finely chopped I like red onions best, but used a small white one as I had it on hand
1 tablespoons parsley, finely chopped
2 eggs, hard boiled and diced
3 tablespoons mayonnaise
1 tablespoon dijon mustard
½ teaspoon sea salt
1. Chop cauliflower into small florets (½ inch) As shown in the photo, I like to chop it into fours, then cut the stem off and break the cauliflower into small pieces. But whatever works!
2. Steam cauliflower on the stove until fork-tender, not more or a stronger “cauliflower” smell develops. Do not overcook, or the salad won’t have the same effect! It still needs to have some crunch to it.
3. Allow cauliflower to cool then place in a large bowl
4. Add celery, onion, parsley and egg
Stir in mayonnaise, mustard and salt
